Cristina is the housekeeper at Palombara and the key to its success. Having looked after the house for many years, she is a fountain of knowledge regarding not just the house but the local area. Her husband looks after the gardens and tends the olive trees, flower beds, pool and irrigation system.
A good cook, Cristina can prepare simple country dishes using fresh, local produce for guests if they desire. A welcome meal is always recommended to start off the holiday after a long journey. A typical summer evening meal would be melon and cured ham, pasta with fresh tomato and basil sauce, salad and veal then homemade apple cake for dessert.
